Turkey, Black Bean & Brown Rice Tacos
Recipe:
2/3 cup Black beans rinsed
2/3 cup brown rice cooked
¾ cup sliced green onion
¼ cup whole kernel corn
¾ cup roasted peppers diced
2/3 cup ground turkey cooked
8 corn tortillas
1 package taco seasoning
1 cup water
1 cup shredded cabbage
2 ounces cheddar soy cheese
Steam the brown rice in a steamer for about 35 minutes. Add all ingredients together in a mixing bowl, except for the corn tortillas, soy cheese and cabbage. Mix together well. Heat the corn tortillas in a microwave for 45 seconds, or until soft. Add ¼ cup of filling to each tortilla, two tortillas per plate. Garnish with cabbage and soy cheese.
