Cocoa Nut Butter “Truffles”

This delicious snack is high in protein and easy to pack up and take on the go, making it the perfect energy boost before or after the gym. These “truffles” taste like an indulgent dessert but have less than 100 calories each!

Recipe:
1-½ cups dry old-fashioned oatmeal
1 cup fat-free powdered milk
3 tablespoons unsweetened cocoa powder
2 scoops (4 tablespoons) The Biggest Loser chocolate protein powder
2 tablespoons ground flaxseed
2 packets Truvia or other natural sweetener
½ cup unsweetened vanilla almond milk
¼ cup all natural almond butter or peanut butter
1 ½ tablespoons vanilla extract
½ cup chopped almonds or walnuts (optional; see note)

In a large bowl, mix the oatmeal, powdered milk, cocoa, protein powder, flaxseed, and sweetener. In a small bowl, place the almond milk and nut butter. Microwave for 1 minute. Add the vanilla and stir well. Add the nut butter mixture to the dry ingredients and stir to combine. There will be about 2 cups of mixture. Stir in the nuts, if desired. Using a 2-tablespoon scoop, form 16 “truffles” and refrigerate until firm. Wrap individually and store in the fridge. Note: Including the optional ½ cup nuts will increase the calories to about 100 per truffle.

Makes 10 (1-truffle) servings
Per serving: 80 calories, 5 g protein, 10 g carbohydrates (3 g sugars), 3 g fat (0 g saturated), 0 mg cholesterol, 2 g fiber, 50 mg sodium
